The story begins with Aunt Umm Hussein, who is the mother of a family of 10 children and is considered the sole breadwinner for them. Umm Hussein works in making cheese and yogurt on a daily basis, which is the profession she inherited from her fathers and grandfathers. She depends on selling milk, yogurt, cheese, and ghee as a source of livelihood for her and her children.
Umm Hussein has only a few “goats” left after she owned many of them before they were displaced from the Aleppo countryside. She gives them special and good care. Healthy animals produce good milk, rich in important nutritional elements. She also rely on the manual and traditional method of making dairy, cheese and ghee because they are healthier than methods that rely on modern machines and technologies.
Umm Hussein has great confidence from the people in the camp she lives in and the camps surrounding it, and she produces approximately 10 kilograms of cheese weekly, as cheese represents a true passion for the family, as it gives them a feeling of satisfaction, especially after hearing the opinions of their customers about the quality of their products.
Thanks to this effort and attention, Aunt Umm Hussein was able to build a good reputation and achieve great success in the field of dairy, ghee and cheese industry. She hopes to expand the scope of her work to reach more customers and increase her income so that she can fully meet the needs of her family and children, relying on herself.
